This certification guarantees the highest physical-chemical and organoleptic quality, which can be obtained only by using ripe and healthy olives. It also means that the entire production cycle , from the harvest to the bottling, takes place within specific limits.
SASSO ROSSO oil is made from olives picked and cold-pressed within 24 hours. It is characterised by its yellow-green colour and unique scent of fresh fruit, with hints of herbs from the Umbrian countryside. Thanks to its harmonious taste of healthy fruit picked at its peak, pleasantly bitter and slightly spicy, it compliments all kinds of dishes. Perfect on red and white meats, in soups and sauces. Excellent on bread,
vegetables, salads and cold plates, as well as more elaborate cuisines and intense flavours.
In addition to being superb in the kitchen, it is a great ally of our health due to its high content of Polyphenols (antioxidants), which contrast “free radicals” and are real quality indicators, since their concentration is directly related to the quality of the fruit and its prompt elaboration. Moreover, the right amount of monounsaturated fatty acids (oleic acid), which are present in high proportion in extra virgin olive oil, minimise LDL levels (the so-called “bad cholesterol”) and may increase HDL (the so-called “good cholesterol”).
